This New Year’s Eve let us take you on a culinary journey of Western Australia as you welcome the arrival of 2025 with a six-course menu.

Savour in local Western Australian flavours with Southwest marron, dry aged Wagin duck, coconut ganache and lemon myrtle for $295 per person, including a glass of Ruinart “R de Ruinart” ‘Brut’ on arrival.

Torched Fremantle octopus, brown butter, horseradish, capers, wild rosemary

Dry aged Wagin duck, duck leg ham, sour cherry, red wine jus

Pardoo Wagyu oyster blade beef (mb 8-9), mushroom ketchup

Coconut ganache, red centre lime, caramelised white chocolate, Geraldton wax
